after a quick search I haven't found an issue related to this, but I think it is related to this: https://hothardware.com/news/freebsd-programmers-report-ryzen-smt-bug-that-hangs-or-resets-machines
As reported, my machine with Ryzen 1600 hangs with no log on "messages", going black screen and unresponsive.

The mentioned patch is already backported to FreeBSD stable/11 branch about a month ago and should be present in recent FreeNAS 11 nightly builds.
Lorenzo, you may try to install nightly FreeNAS build and report whether it work for you.

If you update via WebUI, then all previous boot environments will remain intact. If you update from CD/USB image, then installer will only copy the most recent configuration database and wipe/recreate the reset. In any case backup (at least of configuration) is recommended.

Does the screen go black exactly when system hangs? If so, then I'd suspect some hardware issue, I'd say it is more likely insufficient power or cooling. Usually when system hangs on software reason, screen just freezes or report some panic message. While this platform is definitely new and may benefit from more polishing, I don't see obvious issues in logs.
I don't think it is related, but I would like to notice that you are running very old firmware on one of your LSI HBAs. Make sure to update it to the latest version.
